Recently many people enjoy barbeque outside in Japan because it’s kind of difficult to go restaurant with friends due to the current situation with coronavirus. I also have barbeque every weekend in my garden with my family and I enjoy cooking smoked foods these days. Of course you can eat the smoked foods at the barbecue time with friends but also you can enjoy them at night with a glass of whisky while watching TV with your family!

I am going to share extremely easy cooking of smoked eggs today.

Prepare for smoking

I don’t have any smoking devices but just I used a skillet made of cast iron for smoking. Anyway you can buy the skillet from 100 yen shop in Japan! What a cheap it is!
①Cover the skillet pan with aluminum foil to avoid getting dirty
②Put some wood smoking chips on the aluminum foil
③Put a little bit big grid on the skillet pan otherwise the wood smoking chips will get on the delicious smoked food

In addition you prepare some hard boiled eggs that cook for 7 minutes after the water comes to a boil. And marinate them in the sauce made of soy sauce, some sugar and sweet sake for cooking for about several hours as you like.

After marinating them, wipe off the excess liquid to get easier to be smoky and put them on the grid carefully.

Smoking

First you make a fire for barbecue. If you cook some smoking foods in a house, your home might be strongly smoky!
Cover the top half of the skillet pan including boiled eggs to avoid flying smoke away.
After confirming some smoke comes out, wait for 10 or 15 minutes.
I recommend you to turn the eggs over once and do not forget covering them with aluminum foil again.

I didn’t turn the eggs the other way then the top half of eggs didn’t get colored so much, the taste was so delicious though.

The bottom half of the egg looks so yummy and smells good! The egg whites are chewy!

However the egg yolk is almost runny and delicious rich flavor. You can taste both chewy of egg whited and runny texture of egg yolk!!

Summary

I’ve shared how to cook the smoked eggs today simply but I guess other easy methods for smoking around the world and I am going to try some different ingredients to cook smoking for example cheese, bacon, seafoods and more!
